When it comes to outdoor cooking, few things compare to the sizzling aroma of a perfectly grilled steak mingling with the fresh flavors of jalapeño and lime. Ingredients:

  • 1 pound flank steak (or your preferred cut)
  • 2-3 jalapeño peppers, sliced
  • Juice of 2 limes
  • 4-6 small flour or corn tortillas
  • 1 red onion, thinly sliced
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper, to taste
  • Olive oil (for grilling)

Marinade:

  • 3 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

Instructions:

  1. Prepare the marinade: In a bowl, combine minced garlic, soy sauce, Worcestershire sauce, honey, olive oil, cumin, and smoked paprika. Mix well to create a flavorful marinade.
  2. Marinate the steak: Place the flank steak in a resealable plastic bag or a shallow dish. Pour the marinade over the steak, ensuring it is coated evenly. Seal the bag or cover the dish and refrigerate for at least 2 hours, allowing the flavors to infuse.
  3. Prepare the campfire: Build a campfire and let it burn until you have a bed of hot coals. You can also use a portable grill or grate over an open flame.
  4. Preheat a cast iron skillet or grill over the campfire. Drizzle a bit of olive oil onto the skillet or grill to prevent sticking.
  5. Grill the steak: Remove the steak from the marinade, allowing any excess to drip off. Season the steak generously with salt and pepper. Place the steak on the hot grill or skillet and cook for about 4-5 minutes per side for medium-rare, adjusting the cooking time according to your desired doneness.
  6. Add the jalapeños: During the last few minutes of grilling, add the sliced jalapeños to the grill or skillet alongside the steak. This will allow them to soften slightly and infuse their heat into the meat.
  7. Rest and slice the steak: Remove the steak from the heat and let it rest for a few minutes to retain its juices. Slice the steak against the grain into thin strips for tender and flavorful taco fillings.
  8. Warm the tortillas: Place the tortillas on the grill or wrap them in aluminum foil and heat them over the campfire until warm and slightly toasted.
  9. Assemble the tacos: Take a warmed tortilla and layer it with slices of grilled steak, grilled jalapeños, sliced red onion, and a squeeze of fresh lime juice. Garnish with chopped cilantro to add a pop of freshness.
